A measure over a glass of ice. Concentrated, so a little goes a long way.

Blood Orange · 2 minutes
Blood Orange Spritz
Bittersweet citrus over ice, long on bubbles. Serve it as it is, or add a splash of prosecco for the grown-up version.
Pour
- 30ml Blood Orange syrup
- 150ml chilled sparkling water
- Orange slice, ice
- Optional: 60ml prosecco
Build
- Fill a wine glass with ice.
- Pour the syrup, then top with sparkling water.
- Add prosecco now if you like, stir once.
- Finish with an orange slice.

Sorrento Lemonade
No alcohol
The house lemonade. Bright, not too sweet, fresh mint and a squeeze of lemon.

Pour
- 35ml Sorrento Lemon syrup
- 180ml chilled sparkling water
- Fresh mint, lemon wedge, ice
Build
- Press a few mint leaves in a tall glass.
- Add ice and the syrup.
- Top with sparkling water, stir gently.
- Squeeze in the lemon wedge.

Espresso Tonic
No alcohol
Sparkling water, a single espresso, a thread of citrus. The afternoon reset.

Pour
- 1 shot espresso, cooled
- 15ml Sorrento Lemon syrup
- 160ml chilled sparkling water
- Ice, lemon twist
Build
- Fill a glass with ice, add the syrup.
- Top with sparkling water, leave room.
- Pour the espresso over the back of a spoon.
- Finish with a lemon twist, serve unstirred.
The slow weekend

Elderflower Tonic
Optional gin
Floral and dry. A clean low-sugar pour, or a gin and tonic with real character.

Pour
- 25ml Elderflower syrup
- 150ml chilled sparkling water
- Cucumber ribbon, ice
- Optional: 45ml gin
Build
- Drop a cucumber ribbon and ice in a short glass.
- Add the syrup and gin if using.
- Top with sparkling water.
- Stir once, serve cold.

Ginger-Lime Fizz
No alcohol
Warm fresh ginger, sharp lime, elderflower to round it off. Bright and easy.

Pour
- 20ml Elderflower syrup
- 2 thin slices fresh ginger
- 170ml chilled sparkling water
- Lime wedge, ice
Build
- Press the ginger and a squeeze of lime in the glass.
- Add ice and the syrup.
- Top with sparkling water.
- Stir once, garnish with lime.
When people come over

Pomegranate Cooler
No alcohol
A deep red, alcohol-free cooler with lime and a few pomegranate seeds for crunch.

Pour
- 30ml Pomegranate syrup
- 170ml chilled sparkling water
- Lime wheel, pomegranate seeds, ice
Build
- Fill a tumbler with ice and a scatter of seeds.
- Add the syrup, top with sparkling water.
- Stir gently to lift the colour.
- Float a lime wheel on top.
